    I haven't had to really re-sharpen it yet obviously, and a ceramic honing rod works really well at keeping this knife super sharp. I highly recommend ceramic rods/"steels", they work much better than the steel ones. Kyocera offers a ceramic rod at a reasonable price. I wish there was a knife that was this sharp that I didn't have to regularly hone to keep the edge perfect, but to my knowledge no such knife exists - an edge this sharp, if you actually use the knife, will require some maintenance. You should be doing this with all your knives anyway.

    I am a restaurant chef that is particular about my knives. Shun is too light and doesn’t hold an edge. Miyabi has some good knives but nothing that ever made me want to use it for an extended period of time. Wustof is high quality but too bulky. The list goes on. Ive cycled through a lot of knives without finding one that I truly loved until taking a chance on Enso. Perfectly balanced with great weight for extended periods of cutting. Outstanding quality of steel that held its edge for over 6 months of daily use. Hard as hell to sharpen but once it do, it lasts. I prefer Japanese style blades and materials but European style handles so if I were to “complain” about one thing, it would be the handle but that’s just personal preference. Having used this as a true chef’s knife in cutting everything from veg prep to filleting fish and fabricating wagyu, I love this knife. Spring for the sheath, you wont regret it.

    the knife is lighter than I thought it might be. The spine is a bit thinner than German knives like Wusthof and Henckels, but the blade doesn't flex or feel flimsy at all. The hammered section is less dramatic/bumpy/ridge-y in person than it looks in the product photos, which I like. The balance point is slightly in front of the very heel, right about where I pinch grip the knife. This assists the blade in cutting. The knife feels comfortable and well-balanced in use, even at the larger 10" size. The handle is also not as fat as I feared -- it's a reasonable handle for which you don't need to have big hands. That said, the profile of the handle is classic rather than asymmetrical or especially ergonomic, and that's really the only realistic room for improvement here -- it's by no means bad, but I've held knives where the handle was a bit more engineered and better for it.

    A true form Japanese blade forged and made in Japan (unlike some other brands advertising chef knives) Beautiful detail and fairly balanced. It feels relatively heavy in comparison to any cheap knife, but it’s heft and weight help in cutting. Sometimes you can hear the hardness make the blade ring! Have had it exactly for a year (2019-2020) and it has been a joy to own. I thought of buying another Japanese knife, but thinking I may buy something different altogether from Sinkei, Japan directly. Great value and a gorgeous gift for the serious cook in your family.

    One of the finest knives I own and I have many(Henkel, Wustoff, Myabi, and Shun). The fit and finish of this knife is excellent. You can feel the craftsmanship as you hold it. The handle is simplistic but still comfortable, allowing for many different grip styles and cutting techniques. True Damascus layering with the vg10 core sharpens like a dream and stays sharp. Out of the box it is insanely sharp...which is hard to match. I love it and would highly recommend!

    I can't say enough about how much I love this knife. Been a professional chef for most of my life (20 yrs). I lost my main chef knife and decided to take a chance on this one -- I will never look back to "standard" kitchwen knives.     I have been working in professional kitchens for over 40 years, more than I care to say lol. I have not bought myself a nice knife in many years but finally pulled the trigger. Wish I had done it sooner. When I was young I spent the money but had numerous knives stolen or abused so I just went with the flow and used house knives if there were any supplied or bought good less expensive knives that did the trick.
